I've made it with lamb and to be honest, I do prefer it with beef. Bring Guinness to a boil and stir to dissolve the caramelized meat juices on the pan. Pour over the meat, along with the remaining Guinness. Whisk in broth, ¾ cup Guinness, sugar, and thyme, scraping up any browned bits.
