Yam Porridge. The Nigerian Yam pottage/Yam Porridge (Asaro) Recipe - Asaro which is also known as Yam pottage or Yam porridge is a very delicious Yam recipe. It is mainly yam cooked with ingredients and the resulting dish contains some soupy liquid. It is usually not cooked with added vegetables but I always add a little to add some green colour to the meal (see video).

Ingredients of Yam Porridge
- It's of Yam tuber.
- Prepare of Salt (to taste).
- You need of Pepper (to taste).
- It's of Stockfish.
- Prepare of Red palm oil (to colour).
- You need of Fresh green vegetable (For example; Ugu).
- Prepare of Beef(optional).
- Prepare 1 of smoked fish/dry fish.
- It's 1 tablespoon of ground crayfish.
- Prepare of Habanero or Chilli pepper (to taste).
- Prepare 2 of big stock cubes.
- It's 1 of medium onion.
Then cover the pot and allow to cook until the chicken and yam are tender and the porridge thickened. Bring down from heat and serve warm garnished with few slices of fresh tomatoes with some basil and parsley leaves. Yam porridge, also referred to as yam pottage or jokingly as jollof yam is a dish from South West Nigeria. As the name suggests, it is made with white yam.
Yam Porridge instructions
- Wash the beef,spice it with salt,pepper,onion,stock cube(I used Maggi here). Add the Stockfish for that special flavor..
- When the beef is cooked,place it on a chopping board and cut it into desired size..
- Peel and cut the yam tuber into medium sizes. Wash and then place in a sizable pot. HINT; the smaller the yam cubes the faster it cooks..
- Wash and cut the onions into tiny pieces. Grind or blend the chilli pepper (your choice) and set aside..
- If you’re using dry fish, here is where you soak and pick the bones..
- Add enough water to cover the yam cubes and start cooking at medium to high heat. Now is the best time to add the dry fish if you’re making use of it..
- After the yam has boiled for a while, add the onions, ground crayfish, pepper, stock cubes, palm oil and the smoked fish. (Then add the stock from the beef).
- Add salt to taste and stir very well. Cook at high heat for about 5 minutes, add the chopped the beef now..
- Add the green vegetable(chopped and washed thoroughly), stir and leave to stand for few minutes then serve..
