  4. Transfer into the slow cooker and add the beef broth ~ add more broth or water to just cover and submerge the beef, if needed ~ set slow cooker to lowest possible setting and allow to cook covered for about 6 hours..
  5. About 1 hour before it's done, add the carrots and cook until they are cooked thru yet firm..
  6. Cooks Notes: you can serve this with french bread or rice noodles..
