After thinly slicing the mushrooms, put them in a bag overnight to let them soak up a marinade made from soy sauce, rice vinegar, maple syrup, liquid smoke, garlic powder, and onion powder. After the mushrooms are done marinading, it's time to prep them for dehydrator. First, I drain the mushrooms using a colander to get excess liquid off. I love seeing all the different colors of spices sprinkled on the mushrooms. Combine the Worcestershire sauce, light soy sauce, maple syrup, cider vinegar, chilli powder and smoked paprika in a jug and stir this until well combined. You will need large brown mushrooms, or porcini mushrooms as the have a well defined, robust flavor. I've been looking for plant based jerky since forever and I finally found it with @vegky! I love how this is vegan.
