A big bowl of noodles with dark sauce gravy, complemented with fresh prawns, fish cakes and pig intestines.
Hawker - Prawn Mee River South (Hoe Nam) Prawn Noodles is one of the better prawn noodles in Singapore. I have probably eaten here during my childhood days as my parents stay in Potong Pasir. However, I have not gone back since then, not till my editor from Lian He Zao Bao recommended me to have a meal there. You can have Childhood prawn noodles using 20 ingredients and 7 steps. - Prepare of Noodles.
- It's of Bihun.
- Prepare of Stirred fried 300g shallots.
- It's of kangkung.
- Prepare of Hard boiled eggs.
- It's of from 4 fishcake.
- Prepare of Deshelled prawn from 2kg prawn.
- It's of lean pork.
- Prepare of Stock.
- It's of Stirred fried Shell from 2kg of prawns.
- You need of chopped red onion.
- You need of chopped shallots.
- Prepare of cooking oil.
- It's of Garlic cloves with skin.
- You need of Sengkuang.
- Prepare of Soy bean.
- Prepare of Ikan bilis.
- It's of White pepper.
- Prepare of Add rock sugar and salt to taste.
- It's of water.
In a wok or large saucepan, bring the stock to the boil. Stir the sauces into the stock, then add the ginger. - Put all stock ingredients in the pot and boil for 20 minutes.
- Add in the lean pork and continue simmer the stock for another 40 minutes.
- Take out the pork and leave it cold before slicing it.
- Blanch the fish cake and prawn meat for 1 minutes in the stock.
- Blanch the noodles, bihun and Kangkung in separate pot.
- Place the noodles, bihun, Kangkung, fishcake slices, pork slices, prawns, and ladle the stock over. Top up with fried shallots for more intense soup taste..
River South (Hoe Nam) Prawn Noodles. Be prepared to wait, even after lunch hours. One advice for home cooks making prawn noodles at home is… MAKE YOUR OWN CHILLI. Even with Tungsan (the biggest Chinese condiments and dry goods supplier in Singapore), I cannot find a good chilli sauce to go with the noodles. Off-the-shelves condiments are meant to be a base or supplementary flavour for your chilli.
