- Prep the meat:wash drain.remove excess fat on skin and meat.(you will notice the white fat and this is very easily removed inshaallah).

- Dry simmer the meat.and add the chopped veg.let simmer until starts drying then here can add the carrots.also add some lemon juice.(avoid the piths).
- When meat is tender add cilantro and leave to simmer in high medium heat for about 2 minutes..When nice and soft and dryish it is ready to serve with favorate dish chapati or planter or cassava or rice...it's is very versatile and simple dish...
- .here we make it with matoke which are East African green bananas,they are very soft and easily cook.
- So once the meat is tender.you can prep the matoke bananas:peel and put in bowl of water scrub off the sticky outside using a teethed butter knife..
- Prep the matoke bananas:..Then chop up into smaller pieces..Then add in a sufuria /Pan..together with the meat.add about 2 or 3 cups water.then simmer until bananas are tender and the sauce is more thicker....
